Gluten Free Jim's Jambalaya

Jambalaya

Comment: What a delicious treat we had when Jim brought in his home made Jambalaya to the gathering of coworkers sharing a bit of holiday cheer. Jim has been cooking gluten free for quite awhile and as we know, creativity in developing GF recipes is a must so we asked Jim if he would share his “Jimbalaya” recipe with us and we with you. Enjoy!

Ingredients:Chef
1 large onion
1 large red pepper
1 pkg Alfresco GF Sweet Italian Chicken Sausage (4 to a pack)
1 pkg Alfresco GF Jalapeno Chicken Sausage (4 to a pack)
1 lg can (20oz) Dole Pineapple chunks
1 lg jar Tostitos Chunky Salsa (medium)
3 pkgs Uncle Ben’s Ready Brown Rice (microwavable)
2 tbls Olive oil
¼ tsp Chili powder
¼ tsp Paprika
Salt to taste

Preparation:

  1. Slice onion and pepper into thin slices.
  2. Slice all sausage into ½ inch pieces (semi frozen helps in cutting)
  3. In a large sauté pan heat olive oil, sauté onions and peppers over medium heat for 5 minutes, season with salt. Place sausage pieces into pan and continue to cook for another 4-5 minutes, stirring mixture. Add all spices.
  4. Add pineapple and salsa, lower heat to simmer.
  5. Cook each package of rice in microwave following instructions on box.
  6. Mix in cooked rice, remove from heat. Ready to serve.
