Gluten Free Tuna on Lettuce

GF Tuna on lettuce

Comment: Tuna is a popular item around here regardless of the season and this recipe is especially tasty when combined with the lettuces, tomato, cucumber, red onion and dressing. Tuna has its own distinctive taste and adding an olive oil and red wine vinegar dressing smoothes it out and gives it just the right tanginess.

Ingredients:
1 5 ounce can solid white chunk tuna in water, drained
2.5 quart-sized glass bowl filled with a combination of washed & dried lettuces (Red or Green leaf, Romaine, Iceberg, etc.)
¼ small red onion cut into slices
¼ red pepper, diced
½ tomato, cubed
¼ cucumber peeled and cut into slices
Dressing:
2 tbl olive oil (or vegetable)
2 tsp Red Wine Vinegar
¼ tsp salt (hold if for dietary need)
¼ tsp ground pepper
¼ tsp dry Parsley
Preparation:
  1. Pat dry the lettuces and place in bowl
  2. Drain the tuna by pressing the cut lid onto the tuna releasing all of the water
  3. With a fork, split the tuna into chunks out of the can into the lettuce mix
  4. Add your premixed dressing (above or your own favorite)
  5. Gently stir the tuna into the lettuce being careful not to fragment the tuna
